- 3 to 4 potatoes, peeled and diced
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 2 Tbsp. butter
- 2 c. corn (fresh or frozen)
- 2 c. milk
- salt and pepper
- 1/2 tsp. paprika
- 1 tsp. brown sugar
- 1/2 tsp. thyme
Directions

1Saute the onion and pepper in butter in a heavy soup pot.

2Add the potatoes and enough water to just cover.

3Bring to a boil, reduce heat and simmer until the potatoes are done.

4Mash some of the potatoes against the side of the pot or use a potato masher to mash some of them. Add the remaining ingredients and simmer for about 30 minutes.

5Serve with crusty bread, some mild cheese and a crisp salad.
