Ingredients

  • 3 to 4 potatoes, peeled and diced
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 2 Tbsp. butter
  • 2 c. corn (fresh or frozen)
  • 2 c. milk
  • salt and pepper
  • 1/2 tsp. paprika
  • 1 tsp. brown sugar
  • 1/2 tsp. thyme

Directions

    Saute the onion and pepper in butter in a heavy soup pot.

    Add the potatoes and enough water to just cover.
  3. 3
    Bring to a boil, reduce heat and simmer until the potatoes are done.

    Mash some of the potatoes against the side of the pot or use a potato masher to mash some of them. Add the remaining ingredients and simmer for about 30 minutes.

    Serve with crusty bread, some mild cheese and a crisp salad.
