- 4 ounces bacon
- 2 tablespoons olive oil
- 2 cups yellow onions
- 2 tablespoons unsalted butter
- 14 cup flour
- 12 teaspoon pepper
- 6 cups chicken stock
- 1 lb potato
- 5 cups frozen corn
- 1 cup half-and-half
- 14 lb white cheddar cheese
Directions

1Cook 4 oz of chopped bacon in 2 tbsp olive oil until brown.

2Remove bacon and reserve.

3Add 2 c chopped yellow onions and 2 tbsp unsalted butter and cook until translucent.

4Stir in 1/4 c flour and 1/2 tsp black pepper.

5Salt to taste.

6Cook about three minutes.

7Add 6 c chicken stock and 1 # diced potatoes.

8Bring to a boil.

9Simmer uncovered 15 minutes.

10Add 5 c frozen corn, 1 c half and half, and 1/4 lb white sheddar.

11Cook until cheese is melted.

12Serve with bacon garnish.
