- 1 lb. baking potatoes, peeled, cut and diced
- 1 medium red bell pepper, cored, de-ribbed and cut in 1/4-inch pieces
- 1 medium green bell pepper, treated same as red bell pepper
- 1 small onion, chopped
- 1 c. water
- 4 ears of corn, kernels removed (2 c.), cooked
- 4 scallions, white and green parts, trimmed and thinly sliced
- 2 stalks celery, peeled and thinly sliced
- 1 1/2 c. milk
- 1/2 c. heavy cream
- 1 Tbsp. salt
- 3 drops hot red pepper sauce
- freshly ground pepper to taste
- 2 Tbsp. unsalted butter (optional)
Directions

1Place potatoes, peppers and onion in water in 5-quart casserole with tightly fitting lid.

2Cook, covered, at 100% power in high power oven, 12 minutes or 24 minutes in a low power oven.
