- 1 cup stone-ground cornmeal
- 3/4 cup boiling water
- 4 large egg whites, beaten stiff
- Salt and pepper
- 1 teaspoon ground cumin
- Butter for the pan
Directions

1Mix the cornmeal and boiling water and set aside to cool.

2When its cold, beat in the egg whites, salt to taste, pepper, and cumin.

3You may need to add a little more water to make a thick paste.

4Preheat the oven to 300F.

5Generously butter a baking sheet and drop the batter onto it by the soupspoonful.

6Bake 30 minutes, or until lightly browned.

7Serve immediately; these dont keep very well.
