- 1 1/2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1/4 c. sugar
- 2 c. corn flakes, slightly crushed
- 1 1/4 c. low-fat milk
- 1 egg
- 3 Tbsp. vegetable oil
- vegetable cooking spray
Directions

1Stir together flour, baking powder, salt and sugar. Set aside. Measure corn flakes and milk in a large mixing bowl.

2Stir to combine.

3Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well.

4Add flour mixture, stirring only until combined. Spoon batter evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray. Bake at 400° about 20 minutes or until lightly browned. Serve warm.

5Yields 12 muffins.
