- 1/2 c. all-purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp. cooking oil
- 1 c. fresh or canned whole kernel corn
Directions

1Combine dry ingredients and mix well.

2Combine remaining ingredients and blend into dry ingredients, without overmixing. Drop by tablespoons into preheated 375° vegetable shortening.

3Fry until golden brown, turning once.

4Place on paper lined baking sheet in warm oven until all are cooked.

5Serve with maple syrup. Makes about 12 (2-inch) fritters.
