  • 1/2 c. all-purpose flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. cooking oil
  • 1 c. fresh or canned whole kernel corn

Directions

    Combine dry ingredients and mix well.

    Combine remaining ingredients and blend into dry ingredients, without overmixing. Drop by tablespoons into preheated 375° vegetable shortening.

    Fry until golden brown, turning once.

    Place on paper lined baking sheet in warm oven until all are cooked.

    Serve with maple syrup. Makes about 12 (2-inch) fritters.
