- 3 to 4 large ears corn
- 3 Tbsp. flour
- 1/4 tsp. salt
- freshly ground pepper
- 2 eggs, separated
- vegetable oil
Directions

1Remove kernels from cobs.

2Mix corn and flour.

3Blend in salt, pepper and egg yolks.

4In a separate bowl, beat egg whites until soft peaks form.

5Fold into corn mixture.

6Cover bottom of a large skillet with oil.

7Heat until a drop of water sizzles. Drop batter by tablespoonfuls into skillet.

8When browned on bottom, carefully turn and brown on the other side.

9Serve warm.
