- 3/4 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 egg, slightly beaten
- 1/2 c. milk
- 1 can whole kernel corn, drained
- confectioners sugar
Directions

1Combine flour, baking powder, sugar and salt.

2Mix well.

3With a fork, stir in egg, milk and corn until flour mixture is just moistened.

4In a large skillet heat 1/4 inch of oil on medium. Drop corn mixture by tablespoon into skillet about 5 at a time. Cook 3 to 4 minutes on each side.

5Drain well on paper towel-lined tray.

6Dust fritters with confectioners sugar.
