Corn Fritters

  • 3 or 4 ears fresh corn or 1 (8 3/4 oz.) can whole kernel corn
  • 1 1/2 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1 beaten egg
  • 1 c. milk
  • fat for frying

Directions

    Cut kernels off ears of corn to make 1 cup.

    Stir together flour, baking powder, and 3/4 teaspoon salt.

    Combine egg, milk, and corn.

    Stir in dry ingredients; mix just until moistened.

    Heat 1 1/2 inches oil to 375° in skillet that is a least 3 inches deep. Drop batter by tablespoons into hot fat.

    Fry until golden brown, 1 1/2 to 2 minutes per side, turning once.

    Drain on paper toweling. Serve with warm maple syrup, if desired.
