Ingredients
- 3 or 4 ears fresh corn or 1 (8 3/4 oz.) can whole kernel corn
- 1 1/2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1 beaten egg
- 1 c. milk
- fat for frying
Directions

1Cut kernels off ears of corn to make 1 cup.

2Stir together flour, baking powder, and 3/4 teaspoon salt.

3Combine egg, milk, and corn.

4Stir in dry ingredients; mix just until moistened.

5Heat 1 1/2 inches oil to 375° in skillet that is a least 3 inches deep. Drop batter by tablespoons into hot fat.

6Fry until golden brown, 1 1/2 to 2 minutes per side, turning once.

7Drain on paper toweling. Serve with warm maple syrup, if desired.

8Makes 24 fritters.
