- 2 c. fresh corn, sliced from cob
- 1 c. peeled, chopped tomatoes
- 1 c. onion, chopped
- 1 c. bell pepper, chopped
- 2 tsp. salt
- 1/8 tsp. red pepper
- 1 c. yellow corn meal
- 1 c. shredded Cheddar cheese
- 2 eggs, beaten
- 1/2 c. evaporated milk
- 1/2 c. water
Directions

1Combine the first 8 ingredients.

2Mix well and let sit for 30 minutes.

3Combine eggs, milk and water.

4Add to corn mixture. Thoroughly greased a 2-quart casserole dish.

5Bake at 375° for 1 hour.
