  • 1 cup corn meal
  • boiling water
  • 4 tablespoons flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 tablespoon molasses
  • 1 egg
  • 1 cup milk

    1. Scald the corn meal with just enough water to cover it. (It might be best to use a shallow bowl so the water can get to the bottom easily)

    2. Let stand 5 minutes, then add flour, salt and molasses.

    3. Thin to a batter with the beaten egg and milk.

    4. Add the baking powder last, beating it in well.
