- 1 c. all-purpose flour
- 3/4 c. yellow corn meal
- 3 Tbsp. sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. shortening
- 1 c. milk
- 2 eggs, beaten
Directions

1Preheat oven to 425°.

2Grease 12 (2 1/2-inch) muffin pan cups; set aside.

3In medium bowl, combine dry ingredients; mix well. Using pastry blender, cut in shortening until mixture resembles fine crumbs.

4Combine milk and eggs.

5Add to dry ingredients, all at once, stirring just until moistened.

6Don't overmix.

7Spoon into cups 3/4 full.

8Bake at 425° for 20 to 25 minutes. Immediately remove from pan.

9Serve warm.
