- 2 c. cornmeal
- 1 Tbsp. sugar
- 2 eggs, beaten
- 1 c. water
- 1 Tbsp. melted shortening or margarine
Directions

1Add sugar to cornmeal and stir.

2Combine eggs, water and shortening.

3Pour 1/2 liquid into mix; blend.

4Add rest of liquid and beat.

5Fill greased muffin tins 2/3 full.

6Bake in 400° oven for 20 minutes.

7Makes 12 muffins.
