- 3/4 c. boiling water
- olive oil for cooking on griddle
Directions

1Combine the cornmeal and salt in a bowl.

2Pour in the boiling water and beat until the mixture is smooth.

3Shape the mixture into round balls and flatten into cakes about 1/2 inch thick. Lightly cover hot griddle with oil and cook corn pones until golden on each side.
