  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 stick oleo
  • 1 pkg. Jiffy corn muffin mix
  • 1 can cream-style corn
  • 1 can whole kernel corn, plus the juice
  • 3 beaten eggs
  • salt and pepper to taste

Directions

    Saute onion and green pepper in oleo for 5 minutes.

    Add all ingredients to muffin mix.

    Beat until smooth.

    Bake in casserole at 350° for 30 to 40 minutes.
