- 2 eggs
- 1 1/2 cups sour cream
- 1 10 oz. package frozen corn
- 1/2 cup bread crumbs
- 1 4 oz. can chopped green chilies
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 oz. monterey jack cheese
- 1/2 cup grated cheddar cheese
Directions

1Cut monterey jack cheese into cubes.

2Combine eggs and sour creme in a large bowl.

3Add corn, bread crumbs, green chillies, salt and pepper.

4Mix well.

5Stir in monterey jack cheese cubes. Spoon into a greased 10 inch quiche pan or a square baking pan Bake at 350 or until a knife inserted in center comes out clean Sprinkle with cheddar cheese.

6Bake 5 or 10 minutes longer.

7Cool for 10 minutes before serving.
