Ingredients

  • 8 c. whole kernel corn
  • 4 c. chopped celery
  • 1 c. chopped onion
  • 2 c. chopped green pepper
  • 2 c. chopped sweet red pepper
  • 2 c. vinegar
  • 2 c. sugar
  • 2 1/2 c. water
  • 2 tsp. celery seed
  • 2 Tbsp. salt
  • 1/4 c. all-purpose wheat flour
  • 2 Tbsp. dry mustard
  • 1 tsp. turmeric

Directions

    Combine celery, both peppers and onions.

    Add vinegar, sugar, 2 cups water, celery seed and salt.

    Bring this mixture to a boil and simmer 5 to 6 minutes.

    Blend flour, dry mustard and turmeric in 1/2 cup cool water.

    Add this mixture and corn to the batch.

    Cook, with stirring, for 5 minutes.

    Pack into hot half-pint jars.

    Close and process for 20 minutes in boiling water.

    Cool and store in cool place.
