Ingredients

  • 1/2 c. water
  • 1/2 c. distilled white vinegar
  • 1/4 c. sugar
  • 1 Tbsp. noniodized salt
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 2 tsp. dry mustard
  • 1 c. finely chopped red pepper
  • 1 c. finely chopped celery
  • 1/2 c. finely chopped onion
  • 2 (10 oz.) pkg. frozen corn or 4 c. fresh corn, cut from the cob

Directions

    Combine water, vinegar, all the spices and sugar in 3-quart heavy saucepan.

    Stir frequently with a wooden spoon, bringing mixture to a heavy boil.

    Add red pepper, celery and onion to this mixture and lastly add the corn.

    Return to boil stage.

    Cook, uncovered, for 5 minutes.

    Pack in prepared and sterilized glass jars, sealing tightly.

    Store in refrigerator.

    Makes 1 quart.
