  • 22 medium sized ears of corn (10 cups kernels)
  • 1 large red bell pepper, chopped (1 cup)
  • 1 large green bell pepper, chopped (1 cup)
  • 1-1/4 cups chopped celery
  • 3/4 cup chopped onions
  • 1-1/2 cups sugar
  • 2-1/2 cups distilled white vinegar
  • 2 cups water
  • 1 Tbsp salt
  • 1 tsp celery seed
  • 2-1/2 Tbsp mustard seed
  • 1/2 tsp ground turmeric

    Cook ears in boiling water for 3 to 5 minutes.

    Plunge into cold water and drain.

    Cut kernels from cob.

    Kernels should measure 10 cups.

    Combine corn with remaining ingredients in large pot.

    Simmer 15 minutes.
