- 22 medium sized ears of corn (10 cups kernels)
- 1 large red bell pepper, chopped (1 cup)
- 1 large green bell pepper, chopped (1 cup)
- 1-1/4 cups chopped celery
- 3/4 cup chopped onions
- 1-1/2 cups sugar
- 2-1/2 cups distilled white vinegar
- 2 cups water
- 1 Tbsp salt
- 1 tsp celery seed
- 2-1/2 Tbsp mustard seed
- 1/2 tsp ground turmeric
Directions

1Cook ears in boiling water for 3 to 5 minutes.

2Plunge into cold water and drain.

3Cut kernels from cob.

4Kernels should measure 10 cups.

5Combine corn with remaining ingredients in large pot.

6Simmer 15 minutes.

7Immediately pack into clean, hot pint jars leaving 1/2-inch head space.

9Process in boiling water bath 15 minutes.
