Ingredients

  • 2 qt. cut corn (about 18 ears)
  • 1 qt. chopped cabbage (about 1 small head)
  • 1 c. chopped onion
  • 1 c. chopped sweet green peppers
  • 1 c. chopped sweet red peppers
  • 1 to 2 c. sugar
  • 2 Tbsp. dry mustard
  • 1 Tbsp. celery seed
  • 1 Tbsp. mustard seed
  • 1 Tbsp. salt
  • 1 Tbsp. turmeric
  • 1 qt. vinegar
  • 1 c. water

    Boil corn for 5 minutes.

    Cut from cob.

    Combine with remaining ingredients in a large saucepot.

    Bring to a boil.

    Reduce heat and simmer 20 minutes.

    Pack hot into hot jars, leaving 1/4-inch head space.

    Adjust caps.

    Process for 15 minutes in boiling water bath. Yields about 6 pints.
