- 6 ears yellow corn
- 1/2 long Burpless cucumber
- 1/2 to 1 chopped red pepper
- 1/4 c. oil
- 1/4 c. lemon juice
- little hot sauce
- salt to taste
Directions

1Cook corn and cut off the cob or may use frozen or canned; fresh is better.

2Do not peel cucumber.

3Cut in half and slice. Add chopped red pepper and toss.

4When ready to serve, add dressing.

5May use store bought if preferred.

6Very colorful and tasty.
