- 1/2 c. yellow corn meal
- 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. sugar
- 1 egg, beaten
- 1/2 c. evaporated skim milk
- 2 Tbsp. vegetable oil
- vegetable cooking spray
Directions

1Combine first 5 ingredients.

2Add egg, milk and oil; stir until batter is smooth.

3Coat a cast-iron corn stick pan with cooking spray.

4Heat in a 425° oven for 3 minutes or until hot.

5Remove pan from oven.

6Spoon batter into pan, filling 2/3 full.

7Bake at 425° for 10 to 12 minutes or until bread is lightly browned.
