  • 2 medium zucchini, sliced
  • pimiento, diced (small jar)
  • 1/4 c. vegetable oil
  • 2 c. frozen corn, whole kernel, thawed
  • 1 tsp. garlic salt
  • 1/2 tsp. Italian seasoning

Directions

    Saute zucchini in oil in large skillet or wok 5 minutes or until tender-crisp.

    Add corn, garlic salt and Italian seasonings and saute 3 to 5 minutes until corn is tender-crisp.

    Add pimiento.
