- 1 1/2 c. corn meal
- 1/2 c. flour
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 eggs
- 1/2 c. buttermilk
- 1 Tbsp. butter, melted
Directions

1Heat oven to 350°.

2Combine corn meal, flour, baking powder and salt; sift into large bowl.

3In small bowl, beat eggs with whisk (lightly); add buttermilk and mix well.

4Pour liquid ingredients over dry ones and stir together until smooth using a wooden spoon.

5Do not overbeat.

6Put a 9-inch ovenproof skillet over high heat for 1 minute until very hot.

7Remove from heat and using brush, quickly coat bottom and sides of pan with melted butter.

8Immediately pour in batter, smoothing top.

9Bake in center of oven for 30 to 35 minutes, until it begins to pull from sides of pan and top is browned.

10Cut into wedges and serve hot. Makes one 9-inch bread.
