Cornbread Dressing

Ingredients

  • 3 pkg. yellow cornbread mix, mixed and cooked
  • 8 slices toasted white bread
  • 1 large onion
  • 1/2 c. finely chopped celery
  • 4 eggs
  • poultry seasoning to taste
  • salt and pepper to taste
  • 8 c. seasoned chicken broth

Directions

    Make cornbread according to package directions.

    Let cool (overnight if possible).

    Crumble cornbread and toast into large mixing bowl.

    Add onion, celery and poultry seasoning.

    Mix well. Add hot broth until mixture is a very mushy consistency.

    Stir in eggs, salt and pepper.

    Transfer to a large roasting pan and cook at 350° until firm and browned on top.

    Serves a large group.
