Cornbread Dressing

  • 4 c. crumbled cornbread
  • 2 c. crumbled toast crumbs
  • 4 1/2 c. chicken, pork or turkey stock
  • 3 boiled eggs
  • 1 c. grated celery
  • 1/2 c. grated onion
  • 1/2 c. grated bell pepper

Directions

    Mix cornbread with bread crumbs and add boiling stock.

    Cover and set for 5 to 10 minutes.

    Add chopped boiled eggs, celery, onion and bell pepper.

    Bake in a well-greased pan at 375° for 30 to 40 minutes.

    Since stock and bread are already seasoned, add salt and pepper only if desired.

    Makes 8 cups.
