- 2 pkg. Mexican cornbread mix
- 1 (15 oz.) can whole corn, drained
- 1 onion, chopped
- 1 green pepper, chopped
- 1 1/2 tomatoes, chopped
- 1 c. grated Cheddar cheese
- 4 or 5 slices cooked bacon, crumbled
- 3 hard-cooked eggs, chopped
- 1 tsp. Italian salad dressing
- 1 c. mayonnaise
Directions

1Cook cornbread according to package directions.

2Cool completely and crumble into a large bowl.

3Add corn, onion, pepper, tomatoes, cheese, bacon and eggs.

4Mix mayonnaise and salad dressing together in a small bowl.

5Combine with other ingredients in the large bowl and refrigerate for about 2 hours.
