  • 1 box Jiffy cornbread mix, baked and crumbled
  • 3 large tomatoes, chopped
  • 2 to 3 large green peppers, chopped
  • 1 large onion, chopped
  • 1 jar bacon bits
  • 1 c. mayonnaise
  • 2/3 c. sweet pickle relish
  • 1/3 c. sweet pickle juice

    Combine mayonnaise, pickle relish and pickle juice.

    Stir until well blended.

    In a clear bowl, layer as follows: 1/2 crumbled cornbread, 1/2 tomatoes, 1/2 green pepper, 1/2 onion, 1/2 jar bacon bits and 1/2 dressing.

    Repeat layers and refrigerate overnight before serving.
