- 1 c. all-purpose flour
- 2 tsp. baking powder
- 2 Tbsp. granulated sugar
- 1/2 tsp. salt
- 1 c. yellow cornmeal
- 2 egg whites
- 1 c. skim milk
- 1/2 c. applesauce
Directions

1Heat oven to 450°.

2Spray cornbread or muffin tins with cooking spray.

3Place in oven for 5 minutes to heat while preparing batter.

4In a medium size bowl, combine flour, baking powder, sugar, salt and cornmeal.

5Set aside.

6Place egg whites in a 2-cup glass measure; add milk to measure 1 1/4 cups.

7Beat until thoroughly combined.

8Stir in applesauce.

9Pour egg white mixture, all at one time, into flour mixture.

10Stir until all dry ingredients are moistened.
