Cornbread Stuffing W/Sausage

  • 1 lb Jimmy Dean sausage (we like Hot)
  • 4 tablespoons butter or 4 tablespoons margarine
  • 3 -4 celery ribs, diced
  • 1 large onion, finely diced
  • 1 (14 1/2 ounce) can chicken broth
  • 1 teaspoon black pepper (to taste)
  • 1 (16 ounce) package cornbread stuffing mix
  • 34 cup water
  • salt

Directions

    Heat frying pan over medium high heat.

    Add sausage and cook until browned, stirring and breaking up sausage.

    Remove sausage from pan with slotted spoon and pour off all but 2 Tblsp.

    drippings.

    Add butter, celery and onion; cook, stirring occasionally until vegetables are browned.

    Stir in chicken broth, pepper, salt and water; heat to boiling, stirring to loosen browned bits from pan.

    In a large bowl, put stuffing mix and cooked vegetables.

    Gently mix together.

    Spray 9 x 13-inch casserole dish with cooking spray.

    Spoon stuffing in dish and cover with foil Bake at 325* for about 45 minutes or until stuffing is heated through.
