Corned Beef Casserole

- 1/3 c. butter or margarine
- 1 c. onion, thinly sliced
- 2 c. cooked, sliced potatoes
- 1 (12 oz.) can corned beef, thinly sliced
- 3 hard-cooked eggs, thinly sliced
- 1 can cream of mushroom soup
- 3/4 c. milk
- 1 c. grated cheese
- 1 c. bread crumbs
Directions

1In heavy skillet, cook onion in butter until tender and transparent.

2Place potatoes in bottom of buttered 2-quart casserole and season to taste.

3Add corned beef and eggs over potatoes; add cooked onion.

4Combine cream of mushroom soup, milk and grated cheese.

5Pour mixture over casserole.

6Blend any remaining butter in skillet with dry bread crumbs.

7Sprinkle crumbs on top of casserole.

8Bake in 375° oven for 30 minutes. Sprinkle with paprika and serve with ketchup.

9Yield: 4 to 6 servings.
