  • 1 cup Chopped Leftover Corned Beef
  • 1 cup Chopped Leftover Cooked Red Potatoes
  • 1 whole Egg, Cooked The Way You Like It

    Heat a cast iron skillet over medium-high heat. Add oil and swirl around the pan; add corned beef and potatoes and toss to coat with oil. Press into a single layer and allow it to brown well on the bottom, then stir and repeat until the potatoes have developed lots of crispy edges. Plate it and top with a perfectly cooked egg.
