Corned Beef Salad

  • 2 bouillon cubes
  • 1 c. boiling water
  • 1 pkg. lemon jello
  • 1 c. Miracle Whip dressing
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 can corned beef
  • 2 c. celery, finely diced
  • 1/4 c. onion, finely chopped
  • 3 hard-boiled eggs, diced

Directions

    Dissolve bouillon cubes and lemon jello in 1 cup boiling water.

    Let cool.

    You can use mixer or blender to blend the dressing and cream cheese with the mixture.

    Shred the corned beef and fold it in; add the celery, onion and eggs.

    Put in mold or large dish and refrigerate.

    Can be made day before.
