Cornmeal-Fruit Pudding

  • 2 cups apple juice
  • 1 Tbs. honey, optional
  • 1 tsp. vanilla extract
  • 1/2 cup quick-cooking grits
  • 8 oz. mixture dried fruit, coarsely chopped
  • 6 oz. soy yogurt
  • 1/2 cup chopped pecans or walnuts

Directions

    Bring apple juice to a boil in large saucepan.

    Add honey, if desired, and stir in vanilla extract.

    Stir in grits gently, reduce heat to low, cover and cook, stirring occasionally, until grits start to thicken.

    Stir in chopped fruit.

    Remove from heat, and allow grits to firm.

    Spoon into dessert bowls, top with yogurt and garnish with nuts.
