- 2 cups apple juice
- 1 Tbs. honey, optional
- 1 tsp. vanilla extract
- 1/2 cup quick-cooking grits
- 8 oz. mixture dried fruit, coarsely chopped
- 6 oz. soy yogurt
- 1/2 cup chopped pecans or walnuts
Directions

1Bring apple juice to a boil in large saucepan.

2Add honey, if desired, and stir in vanilla extract.

3Stir in grits gently, reduce heat to low, cover and cook, stirring occasionally, until grits start to thicken.

4Stir in chopped fruit.

5Remove from heat, and allow grits to firm.

6Spoon into dessert bowls, top with yogurt and garnish with nuts.
