- 1 cup unbleached all-purpose flour
- 4 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 cup yellow cornmeal
- 2 large eggs
- 14 cup vegetable oil
- 34 cup milk
Directions

1Grease 12 2 1/2-inch muffin cups.

2Heat oven to 425F.

3Sift flour, baking powder, sugar and salt into medium-sized bowl.

4Add cornmeal and stir to mix well.

5In small bowl, beat eggs with fork.

6Add milk and oil.

7Add all at once to dry ingredients.

8Stir mixture only until dry ingredients are moistened.

9Batter will be lumpy.

10Drop batter from a tablespoon into the prepared muffin cups, filling each cup 1/2 to 2/3rds full.

11Bake 15 to 20 minutes, or until golden brown.

12Remove and serve hot with butter, bacon and eggs.
