- 4 c. cooked cubed potatoes
- 1/2 c. chopped green pepper
- 2 Tbsp. chopped onions
- 6 eggs
- 4 oz. Cheddar cheese
Directions

1Cook 6 slices of bacon until crisp.

2Remove from skillet and pour off excess fat.

3Add 4 cups cooked cubed potatoes, 1/2 cup chopped green pepper and 2 tablespoons onions.

4Cook until browned.

5Season with salt and pepper.

6Break 6 eggs over potatoes and cook until eggs are done.

7Sprinkle with 4 ounces of cheese and crisp bacon.
