Country Casserole

Ingredients

  • 1 small stalk celery
  • 1/2 medium onion
  • 1/2 green pepper
  • 2 Tbsp. margarine
  • 3 Tbsp. all-purpose flour
  • 1/4 tsp. dried basil
  • dash of pepper
  • 1 1/3 c. milk
  • 1 1/2 c. cubed cooked ham, chicken or turkey
  • 2/3 c. cooked green beans, peas, corn or mixed vegetables
  • 1 pkg. biscuits

Directions

    Chop celery, onion and green pepper.

    In a large saucepan, cook in margarine until all are tender.

    Stir in flour, basil and pepper.

    Add milk and cook until thickened and bubbly, then cook and stir 1 minute more.

    Stir in meat and vegetables.

    Pour into a 1-quart casserole.

    Cut biscuits into fourths.

    Place on mixture. Bake in a 400° oven for about 15 minutes or until brown.
