- 1 tablespoon butter
- 1 medium yellow onion, chopped
- 3 medium russet potatoes, peeled and cut into 1/2 inch cubes (about 1 lb)
- 2 cups chicken broth
- 1 cup corn (fresh, frozen or well-drained canned)
- 1 cup milk
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon ground black pepper
- chopped chives
Directions

1Melt butter in a large saucepan over medium-high heat.

2Add onion and cook, stirring frequently, until golden and tender, about 7-10 minutes.

3Add potatoes and chicken broth. Bring mixture to a boil. Reduce heat to low and simmer, partially covered, until potatoes are tender, about 15-20 minutes.

4Stir in corn, milk, salt and pepper; simmer uncovered 5 minutes.

5Ladle chowder into bowls.

6Sprinkle with chopped chives.
