  • 1 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 1 Tbsp. plus 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. sugar (optional)
  • 1/2 tsp. baking soda
  • 1 egg
  • 1 (8.5 oz.) can cream-style corn
  • 1 (8 oz.) carton commercial sour cream
  • 2 Tbsp. vegetable oil

Directions

    Combine first 6 ingredients in a large bowl; make a well in center of mixture.

    Combine remaining ingredients; add to dry ingredients, stirring just until moistened.

    Spoon into greased muffin pans.
