  • 1 can corn kernel, drained
  • 1 can cream style corn
  • 1 package Jiffy Corn Muffin Mix
  • 2 eggs slightly beaten
  • 1/2 stick butter
  • 2 tablespoons green pepper chopped
  • onions 1 sm., chopped
  • 2 cups cheddar cheese grated
  • 1/4 cup sour cream

Directions

    Melt butter, saute onions and green pepper until soft.

    Mix drained, corn, cream corn, egg, muffin mix and onions and green pepper.

    Put in greased 9x12 inch baking dish and top with the grated cheese and sour cream.

    Bake at 350 degrees for 30 to 40 minutes.
