- 4 Tbsp. margarine
- 2 Tbsp. flour
- 1/2 c. milk
- salt and pepper to taste

1Wash eggplant; cut into slices.

3Dip both sides into fine saltine cracker crumbs.

4Place slices on an oiled baking sheet.
