- 4 slices smoked country bacon
- 1 sm. onion, finely chopped
- 6 to 8 ears fresh corn
- Salt and freshly ground black pepper
Directions

1Fry bacon until crisp, drain on paper towels and pour off all but 2 tablespoons of the fat.

2Cut bacon into small strips or crumble it and reserve.

3Fry chopped onion in fat until it softens.

4Husk corn, cut kernels from ears and scrape cobs to get all the milk.

5Add kernels and milk mixture to onions and cook 2-3 minutes.

6Add bacon, season and serve.
