Country Fried Okra

  • 1 doz. (frying size) okra pods
  • 2 large potatoes
  • 1 medium onion
  • 1/2 stick margarine
  • 1/2 c. Crisco oil
  • 1/2 c. flour
  • 1/4 c. meal
  • salt and pepper to taste

Directions

    Chop okra and onion; slice potatoes and mix in bowl.

    Add flour, meal, salt and pepper; stir until all vegetables are well coated.

    Brown in hot oil until tender (about 20 minutes).

    Reduce heat; add margarine to top of vegetables.

    Cover and continue to cook approximately 10 more minutes.
