Ingredients

  • 2 lb. chuck or lean beef, cut in cubes
  • 6 medium onions in quarters or halves
  • 6 carrots, sliced thin
  • 1/4 c. Minute tapioca
  • 1/4 c. seasoned bread crumbs
  • 2 (6 oz.) cans mushroom slices (or 1 1/2 c. fresh)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 28 oz. can tomatoes
  • 1/4 tsp. basil
  • 1 clove minced garlic
  • 1 bay leaf
  • 3/4 c. dry red wine

Directions

    Combine ingredients in a 6-quart Dutch oven in this order of layers:

    beef, onions, carrots, tapioca, bread crumbs, mushrooms, salt and pepper, tomatoes, basil and garlic, bay leaf and wine. Cook, covered, in a 300° oven for 4 hours.

    Do not stir or disturb in any way.

    Great served over rice or noodles.
