  • 1 (2 1/2 c.) can whole kernel corn, drained
  • 1 can cream-style corn
  • 2 eggs, beaten
  • 1/2 c. melted margarine
  • 1 pkg. corn muffin mix
  • 1 c. grated cheese (Cheddar cheese)
  • 1/2 c. chopped red or green pepper
  • 1/2 c. chopped onion (optional)

Directions

    Combine all ingredients except Cheddar cheese.

    Pour mixture into ungreased 9 x 13-inch pan.

    Bake 15 to 20 minutes at 350°. Remove from oven.

    Sprinkle with Cheddar cheese; return to oven and bake 20 more minutes.
