- 1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
- 1 shallot, minced
- 1 cup chicken broth or 1 cup vegetable broth
- 3/4 cup couscous
- 1/3 cup fresh corn or 1/3 cup thawed frozen corn
- 1/4 teaspoon pepper
- 1 pinch cayenne (optional)
- 1/8 teaspoon salt
Directions

1Melt butter in saucepan.

2Add shallot and saute 1 to 2 minutes, or until tender.

3Add chicken broth and bring to a boil.

4Add couscous, corn, pepper, cayenne and salt.

5Cover; remove from heat and set aside 5 minutes.

6Fluff with a fork.
