  • 4 tablespoons unsalted butter
  • 2 cups yellow onions, chopped
  • 3 cups chicken stock
  • 1 12 teaspoons kosher salt
  • 12 teaspoon ground black pepper, freshly
  • 2 cups couscous
  • 12 cup pine nuts, toasted
  • 12 cup fresh parsley, minced

    Melt the butter in a large saucepan.

    Add the onion and cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until tender but not browned.

    Add the chicken stock, salt, and pepper and bring to a full boil.
