- 1 lb. lump crab meat
- 1/3 c. cracker crumbs (unsalted)
- 1 large egg
- 1/4 c. chopped parsley
- 1/2 Tbsp. Dijon mustard
- 2 Tbsp. mayonnaise
- 1/8 tsp. cayenne pepper or ground hot pepper
Directions

1Combine cracker crumbs, egg, parsley, mustard, mayonnaise and pepper and stir to blend.

2Add crab meat and toss lightly with fork.

3Shape cakes with a light touch and chill for about 1 hour. Cook 3 minutes each side in 2 tablespoons of oil and 2 tablespoons of unsalted butter (can use all butter).

4Yields 8 to 9 cakes.
