- 1 lb. crab meat
- 2 Tbsp. mayonnaise
- 1/2 Tbsp. Dijon mustard
- 1 onion
- 1/2 green pepper
- 1/4 c. finely chopped celery
- 1/4 c. minced parsley
- 2 eggs
- 1 stick margarine
- 3 slices bread, trimmed of crusts and barely moistened with water
- Old Bay seasoning
- cayenne pepper
Directions

1Cook onion, green pepper and celery in 1/2 stick margarine. Beat eggs with mayonnaise, mustard, bread and parsley.

2Season with Old Bay seasoning.

3Combine all ingredients with only a dash of cayenne pepper.

4Fry in margarine with 2 tablespoons of cooking oil added to prevent margarine from browning.
