- 2 Tbsp. butter or margarine
- 3 Tbsp. flour
- 1 c. milk
- 2 egg yolks, slightly beaten
- 2 cans (6 1/2 oz. size) crabmeat
- 2 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- dash of cayenne
- 1/2 c. soft white bread crumbs
- 3/4 c. dry bread crumbs
- salad oil
Directions

1Melt butter in medium saucepan; remove from heat.

2Stir in flour to make smooth mixture.

3Gradually stir in milk.

4Bring to boiling over medium heat, stirring, reduce heat and simmer 1 minute.

5Beat some hot mixture into egg yolks.

6Return to rest of mixture in saucepan.

7Cook, stirring, several minutes until thickened.

8Remove from heat.

9Drain crabmeat.
